Salsa – The Perfect Side Dish / Topper


HOMEMADE salsa is a super healthy way to add some flavor to your food.  You can dip organic corn chips, cucumbers, top your fish taco’s, sweet potatoes, chicken, rice, wraps OR just eat by itself.  The salsa provides a bunch of veggies & some protein without any preservatives or added sugar, which is what store bought salsa contains.

Easy Salsa Recipe:
3-4 tomatoes
1 onion
1/2 jalapeno (or a whole if you like spicy)
1/2 cucumber
Large bunch of cilantro
1 avocado
1 ear of corn
1 can organic kidney beans (Eden Organic contains NO BPA in their liners)
Juice of 1 lemon
Salt/Pepper to taste

Boil the corn for about 1 minute.  Cool then use a knife to cut the kernels into your bowl.  Chop everything up, rinse & add the kidney beans, squeeze the juice of 1 lemon & top w/ a little salt & pepper.  Stir, refrigerate & enjoy.  The salsa will stay fresh for 3-4 days.  So make a big batch & use it throughout the week.
