You can make this dish with Bison, grass-fed beef or ground turkey. We like Bison the best and have found the best deal at Costco! It is lean, high in protein, great tasting & has an Omega 6 to Omega 3 ratio of 4:1 or less!
Butternut Squash Bison Mash
1 large Butternut squash
1 pound ground Bison
5-6 garlic cloves
3/4 large red onion
1 jalapeño
Chilie powder
Salt / pepper
Onion powder
2 tbsps unrefined coconut oil
Braggs flakes (sprinkle on top)
Cut the butternut squash in half & bake at 400 deg for 40 min. In meantime sauté your garlic, onion & jalapeño until soft. Add the ground bison & cook until browned. Add all spices. Once the squash has cooled peel off the peeling & mash / lightly chop. Serve bison mixture over the squash. Top with Braggs Nutrition Yeast Flakes for a cheesy finish. ENJOY!
