I made this for dinner last night & we loved it!!! Very comforting food. Instead of rice I used steamed mashed up cauliflower.
Ingredients
1/2 cooked pork roast
1 head cauliflower
1 white onion
1 carrot
1/2 bunch cilantro
2 eggs
1/2 avocado
big spoonful coconut oil
Coconut aminos
Salt/pepper
Cook your pork roast all day in crockpot with water & garlic salt.
Chop up & steam cauliflower until fork tender. In wok add coconut oil, chopped onion & carrot. Sauté 4-5 min or until soft. Add cauliflower & mash with potato masher. Salt & pepper to taste. Crack in 2 eggs & stir fry 2-3 minutes. Add 1-2 tbsps coconut aminos, chopped cilantro & chopped pork. Sauté all together. Serve in a bowl with chopped avo on top. Enjoy!!!
