Easy Dinner – salty pork, carrots & green beans! 


This recipe is a staple in our house.  It smells amazing, has a salty / garlicky flavor, makes amazing leftovers, is EASY & best of all its Amy Approved!!!  I take out the pork roast first thing in the morning and put it in hot water to semi-unthaw.  After my morning run I quickly put it into a pot, smother coconut oil on top (paper towel), a generous amount of salt & pepper, chop an onion & throw in, toss a TON of garlic on top & put it in the fridge.  At noon (lunch time) I put an inch or two of water in the pot & bake at 325 for 5-6 hours.  I check it a few times & sometimes have to add hot water.  About 2 hours before dinner I throw in halved carrots, green beans or whatever I have!

Ingredients:

1 pork roast

1 onion

Garlic (I buy it pre-chopped & just pour it on top)

Salt/pepper

Coconut oil

5-6 carrots

Huge handful green beans
