HOMEMADE Almond Butter!!

I am obsessed with Trader Joe’s raw almond butter and they have been out for a few weeks.  So this event FINALLY motivated me to make my own.  It seriously took only 3-5 minutes TOTAL in my Vitamix!  And the best part is it comes out warm…YUM!

For this size batch use: (I did not measure exact…)
1.5 cups raw almonds (I buy mine at costco)
30 “twists” of sea salt (ok this was a little much – cut back to 15 or 20)
1 tbsp grapeseed oil

Blend on high for 1 minute (do not blend longer or it will blow up your machine).  Scoop out with a spoon & store in a glass container in the fridge.  You could even add cinnamon…YUM YUM YUM!

The BEST Almond Butter Bark I Have Ever Tasted!!!

Another super quick recipe that can help satisfy any “sweet” cravings you might have. And if you can’t do nuts, you can substitute sunflower seed butter for the almond butter.

Ingredients

  • 1/3 cup coconut oil, softened
  • 1/4 cup almond butter*
  • 2 TBSP coconut flakes
  • 2 tsp honey
  • Sea salt
  • 2 tbsps toasted carob powder

Process

  1. Mix all ingredients in a bowl.
  2. Spread on a parchment paper lined cookie sheet.
  3. Sprinkle with sea salt.
  4. Place in freezer for about 1 hour
  5. ENJOY!

Notes  You will be able to make a thicker bark if the almond butter is cold.  If warm, it will spread very easily.

*If you can’t do nuts, replace the almond butter with sunflower seed butter.
*The above photo is NOT my bark.  They used dark chocolate shredded on top & I mixed the carob powder into mine.  Try both!

The next time you are craving sweets so bad you are tearing apart the kitchen for sugar, eat a spoonful of almond butter with a sprinkle of cinnamon & wait 20 minutes.  I PROMISE it will take your craving away.  The fat in the almond butter will satisfy your craving & the cinnamon will stabilize your blood sugar.

Almond Butter = YUM

Almond Butter is my absolute favorite nut butter.  I eat it on bananas, toast, cream of buckwheat, apples, dried unsulphured fruit, carrots, celery, in my baking or just on a spoon…  Here are the benefits:

  1. It contains less calories and saturated fat and more fiber, calcium, iron, vitamin E and magnesium (based on a 2,000 calorie diet) than peanut butter.
  2. It can protect your heart. It’s high in monounsaturated fats, which are associated with a reduction in heart disease risk.
  3. Almond butter is packed with essential minerals. Some of the highly concentrated minerals found in almond butter include manganese and copper. It’s also rich in calcium, iron and magnesium.
  4. Almond butter is an excellent protein source. Almonds are packed with protein. One quarter-cup of almonds alone contains 7.62 grams of protein – more protein than an egg provides (only 5.54 grams).
  5. It tastes great! With a smooth, grainy texture and creamy, nutty taste, this alternative to peanut butter complements everything from toast to vegetables.
