Bison Meatballs – YUM!!!

Bison Meatballs

1 pound ground bison (grass-fed)

1 to 2 green onion, finely diced

1/2 sweet potato, finely diced

1 clove garlic, minced

1 egg

1/2 teaspoon salt

1/4 teaspoon fresh ground black pepper

1/2 teaspoon ground paprika

1 tablespoon fresh parsley, minced

1/4 cup tomato paste

Instructions:

Preheat oven to 375 degrees.  Oil a baking sheet with coconut oil, or you can use aluminum foil (nonstick) or parchment paper to avoid a mess.

Place all the ingredients in a large bowl.  Using a fork, or your hands, mix until everything is evenly combine.  Using a scoop or a large spoon, scoop evenly distributed meatballs onto prepared baking sheet.  I got about 12 to 15 meatballs.  Then put baking sheet in preheated oven and bake for about 15 to 20 minutes or until meatballs are cooked through.

Busy Tuesday = Quick Clean Dinner

Up at 4:15am, ran my 6am circuit with 14 clients, trained 3 more hours at Kennedy then drove to SLO for my home client.  I made it home around 12:30 for lunch & a quick nap 🙂 Then to my office to ship 20 orders for ShapeItUp.  Soooooo by the time dinner rolled around I was exhausted.  I whipped up a quick Bison meatloaf and roasted veggies.  A quick, warm & simple fall meal.

Roasted Veggies

Butternut squash (I used half a container of the organic chunked ones from Costco)
1 carrot
Large handful kale
1 onion
1 portabella mushroom
Salt
Balsamic vinegar

Preheat oven to 400 deg.  Put chopped carrot & squash on baking sheet, lightly coat with grapeseed oil & salt.  Toss with hands & bake for 20 minutes.  In meantime chop onion, kale & mushroom and toss onto veggies at 20 min mark, add a little more oil & salt & bake for another 20 minutes.  Serve in bowl with a dash of balsamic vinegar on top.

Bison Meatloaf

1 lb Bison
1 egg
1/2 apple
1 small onion
2 tbsps mustard powder
Salt

Chop everything up, mix & put into a baking pan.  Bake for 30 min at 400 degrees.  Serve hot!

I served my dinner with sliced avocado & Bubbies sauerkraut.  ENJOY!

Bison Lettuce Wraps

Here is a super clean, easy, make you feel skinny kind of dinner! You can use Bison, grass fed beef or shredded lean pork.

Ingredients
1 lb bison
1 onion
1 tbsp coconut oil
Romaine leaves
1 shredded carrot
2 chopped mushrooms
1 chopped avocado
Sauerkraut (if desired)
Garlic powder
Onion powder
Salt & pepper

Sauté onion in pan with coconut oil for 2-3 minutes. Add meat & cook throughly. Season with above seasonings. Wash romaine leaves & keep whole. Prep toppings by shredding carrot, chopping avo & mushrooms.

Make your lettuce wrap & top with sauerkraut. Enjoy!!

Serves 3-4

Bison is Amy Approved

You can make this dish with Bison, grass-fed beef or ground turkey. We like Bison the best and have found the best deal at Costco! It is lean, high in protein, great tasting & has an Omega 6 to Omega 3 ratio of 4:1 or less!

Butternut Squash Bison Mash
1 large Butternut squash
1 pound ground Bison
5-6 garlic cloves
3/4 large red onion
1 jalapeño
Chilie powder
Salt / pepper
Onion powder
2 tbsps unrefined coconut oil
Braggs flakes (sprinkle on top)

Cut the butternut squash in half & bake at 400 deg for 40 min. In meantime sauté your garlic, onion & jalapeño until soft. Add the ground bison & cook until browned. Add all spices. Once the squash has cooled peel off the peeling & mash / lightly chop. Serve bison mixture over the squash. Top with Braggs Nutrition Yeast Flakes for a cheesy finish. ENJOY!
