Easy Breakfast Bars!!

Breakfast Bars Serves: 12-16 bars

Ingredients:
1 ¼ cup blanched almond flour
¼ teaspoon celtic sea salt
¼ teaspoon baking soda
¼ cup avocado oil
¼ cup raw honey
1 teaspoon vanilla extract
½ cup unsweetened shredded coconut
½ cup pumpkin seeds
½ cup sunflower seeds
¼ cup blanched slivered almonds
¼ cup raisins

 

Instructions:
 1. In a small bowl, combine almond flour, salt and baking soda
2. In a large bowl, combine avocado oil, honey and vanilla
3. Stir dry ingredients into wet
4. Mix in coconut, pumpkin seeds, sunflower seeds, almond slivers and raisins
5. Grease an 8 x 8 inch baking dish with avocado oil
6. Press the dough into the baking dish, wetting your hands with water to help pat the dough down evenly
7. Bake at 350° for 20 minutes 8. Cool bars in pan for 2 hours, then serve

Amy Approved WAFFLES!!!

If you are looking for a warm, satisfying, easy, CLEAN breakfast try these waffles!!!  This morning I whipped them up for Charly and I in 10 minutes.  YUMMMMM!

Ingredients: (serves 2-3 people)
4 eggs
2 bananas
Dash of nut milk (I used flax milk)
Dash of coconut flour
Dash of cinnamon
Coconut oil (to coat on waffle maker)

Place everything into your kitchen aid or blender, add flour or more nut milk to make a semi-thick consistency and mix for a minute or so.  Coat your waffle maker with coconut oil (use a paper towel) & pour batter on.  Close lid and wait until the light turns green.  We topped our waffles with a tiny bit of almond butter and my mom’s homemade jelly.  YUMMM!  You can also add fresh berries to the top or into your batter.

New Breakfast Idea!

Are you sick of the same old breakfasts???  Time to switch it up!
oatmeal

This is a recipe that you make the night before.  I whipped this up in 3 minutes as Charly was having her bedtime snack.

In a cereal bowl add:
1/4 cup chia seeds
1/4 cup gluten free oats
1 cup nut milk (I used full fat coconut milk)
Dash of cinnamon

Stir everything together, cover with plastic wrap & refrigerate overnight.  In the morning I added blueberries & blackberries.  Eat it cold & ENJOY!  You can also make this in a mason jar and grab it out of the fridge on your way out the door.  You can do a ton of variations with fruit, extra nuts or even a dash of honey.  Experiment and let me know your favorite combo!

High Protein Breakfast – Simple, Warm & Clean!

Fall is almost officially (Sept 23rd!) here so a warm breakfast is a MUST! These pancakes are high protein, warm, quick & Amy & Charly Approved!!

Ingredients
Serves 1 (double recipe for 2)
1 banana
2 eggs
Dash of nut milk (I use full fat coconut)
Dash of cinnamon
Coconut oil (for pan)

You can use a KitchenAid like me, a Vitamix or blender OR a good old fashioned fork & bowl. Blend banana, eggs, cinnamon & nut milk. Heat coconut oil in pan, pour mix on, add blueberries (optional). Flip when golden brown. I put my moms jelly on them but truly they are great plain. And YES eat the whole stack!!!

My New Breakfast Obsession

2 ingredient pancakes!!! These babies take minutes to prepare and are a super clean, satisfying, HOT breakfast idea!

Ingredients
2 eggs
1 banana
Cinnamon
Coconut oil (for the pan)

Whisk the eggs in a bowl then take a fork & mash in your banana. Add a dash of cinnamon & whisk together. If you want the batter creamier put into your Kitchenaid mixer or Vitamix. Use a paper towel & wipe coconut oil onto your pan. Heat pan before adding batter. Heat & add batter one pancake at a time. Makes 2 large pancakes. I use a dash of raw honey to sweeten. YUM!!!!!

Homemade Chia Seed Coconut Yogurt

This is a great EASY recipe that my stud client Niccola discovered. You can whip it up in 3 min then it needs to set in fridge for 2.5-3 hrs. I have been making it the night before & eating it for breakfast. Something new!!!!!

Ingredients:
1/4 cup chia seeds
1 cup unsweetened coconut milk
2 tablespoons local raw honey
Big dash of cinnamon (this is my touch – optional)

Mix together & refrigerate 2.5-3hrs or overnight. Enjoy!!!!!

Apple Cinnamon Maple Bacon Sweet Potato Hash

Prep time: 10 min     Cook time: 10 min    Makes: 2 cups

Ingredients:

  • 2 cups of shredded sweet potato or yams
  • 1/2 of an apple, chopped
  • 3 pieces of bacon, chopped (I like Applegate Farms)
  • 1 tsp ground cinnamon
  • 1 tsp pure maple syrup, optional
  • Sea salt to taste
  • Ghee, bacon fat or fat of choice

Directions:

  1. In a skillet over medium heat, render / cook the bacon until it’s crispy. You can save the fat to cook the rest of the ingredients or pour off the fat and start over with a spoonful of ghee, coconut oil, etc.
  2. Add the sweet potato to the pan, cooking on medium heat until they begin to get golden brown.
  3. Add the apples and stir until they soften, about 3-4 minutes.
  4. Season with the maple syrup, cinnamon and sea salt, to taste.

Bonus: For a one-skillet meal, remove the hash to a plate, then quickly wilt some spinach. Remove the spinach to the same plate, then fry or scramble eggs in the same pan.

Grain Free Banana Bread with Orange Zest

This is AMAZING!!!!  A great snack, breakfast or dessert. 

Prep time: 10 min
Cook time: 40-45 min
Serves: 8

Ingredients:
4 ripe bananas (I used 3 large)
4 eggs (I only had 3 so I used about 1/4 cup organic apple sauce too)
1/2 cup almond butter
1/2 cup coconut flour
4 tablespoons coconut oil, melted
1 tablespoon cinnamon
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
pinch of sea salt
zest of 1 orange
Juice of 1 orange

Instructions:
1.  Preheat oven to 350
2.  Combine your bananas, eggs, nut butter, melted coconut oil in mixer & mix well
3.  Once all blended add coconut flour, cinnamon, baking soda, baking powder, vanilla & sea salt & mix well
4.  Add in zest of orange & squeeze juice right into bowl – mix well
5.  Grease a 9×5 glass pan, pour in batter & bake for 40-45 min or until the middle is done.  Check with toothpick throughout

Homemade Energy Bars

On the go energy bars do not have to come out of a package.  These are great for in between snacks or a breakfast on the go.

 

INGREDIENTS:
1/2 cup slivered almonds
1/2 cup pecans 1/4 cup almond or sesame seed  meal
1/4 cup unsweetened shredded coconut
1/4 cup almond butter
1/4 cup  coconut oil
1 tsp pure vanilla  extract
1/2 tsp of raw honey
1/4 teaspoon sea salt
1/2 cup dried  cranberries or blueberries

Method:

  1. On a cookie sheet, toast nuts and shredded coconut until golden brown (you  may need to shake the tray once or twice to make sure they cook evenly).
  2. Once toasted, pour mixture into a food processor and pulse until nuts are  chopped and the mixture becomes coarsely ground.
  3. In a mixing bowl, melt coconut oil and almond butter (about 20 seconds).  Remove from microwave and stir until smooth.
  4. Add vanilla extract, honey and sea salt. Mix thoroughly.
  5. Fold in nut mixture and almond (or sesame seed) meal until mixed  thoroughly.
  6. Fold in blueberries/cranberries.
  7. Press mixture into an 8 by 4 loaf pan.
  8. Refrigerate for 20 minutes or until firm.
  9. Cut “loaf” width wise. Should make 6 good-sized bars.
  10. Enjoy! (or, if you don’t plan to eat immediately, you can store the bars in  the refrigerator, covered loosely with a paper towel and plastic wrap.

Bake an Egg in an Avocado for a Fast and Healthy Breakfast Treat


Avocados are amazing things—they’re delicious on their own, but they also have a lot of healthy fats, dietary fibers, and vitamins, and despite their high caloric value, they’re remarkably easy to prepare. If you have an avocado that’s too firm to use for something else, or you’re just in the mood for something new and healthy for breakfast, slice it in half, remove the pit, and carve out a little space in the center. Crack an egg where the pit was, and bake. In a few minutes, you’ll have a delicious, protein and vitamin-packed breakfast treat that’s rich enough to keep you going all morning.

Preheat oven to 425, have cast iron pan in there

Slice avocado in half, take out pit

Take pan out, put avocado half on, crack egg in

Put whatever you want on top (Nutritional Flakes are AWESOME!)

Place in oven and cook till your eggs [are done how you] desire
