Miranda Before & After…33 Pounds Down…WOW!!!

11 year old Miranda has been on a weight loss journey these past 4 months and has LOST 33 POUNDS!!!!!  Click here to read a blog I wrote at the beginning of her journey.

Miranda has also learned to cook for herself.  Here is her breakfat yesterday which is an omelet made with an omelet maker, shredded sweet potatoes with cinnamon, and salsa.

Thanksgiving…Eating Clean…Recipes!!

Thanksgiving is a time for FAMILY, RELAXING, appreciating what you have TODAY, watching football, laughing, cooking & of course eating.  You don’t have to make EVERY single dish full of calories so here are 4-5 great recipes I used last year and will use again this year.
Cranberry Sauce – HOMEMADE – yes it has sugar but way better than canned!  (thank you John Hall for this one!)
Slow Roasted Turkey Breast
Roasted Acorn Squash Mash
Pumpkin Pie
Mashed Sweet Potatoes

Amy’s tip for Thanksgiving day: *Eat a plate of food (yes whatever you want) but DO NOT go for seconds… *Eat a piece of pie but cut it in half… *If you are going to drink like a fish…Eat like a bird…*MOVE – get up before your guests and EXERCISE!

Vitamix is Amy Approved!

I have had my Vitamix for 4 or 5 years and it is absolutely my favorite appliance!  It can do EVERYTHING, is easy to clean & is super easy to use.  My favorites are: soups (YES if you run blender for 8 minutes it cooks the soup!), smoothies (NO MORE chunky Kale Smoothies!), grinds nuts/seeds, dressings, pureeing, margaritas (BAD…I know!), sauces, ice cream / sorbet, banana bread dough, nut butters and much more…

You can buy the Vitamix here on their website or can sometimes find them at Costco.  They come with a great cook book, the tamper & you can also buy the dry pitcher if desired.  I have both pitchers and grind my nuts/seeds in the dry one but I think one pitcher will pretty much do it all.  Yes they are kinda spendy BUT are worth every cent.  You will never have to buy another blender in your entire life.  You will SAVE $$$ by buying your last blender!

Happy New Year!!

2011 is coming to a close & 2012 is right around the corner.  End 2011 right with a kick butt workout & ring in 2012 with a run/hike/walk & 4 x 10 burpee’s.  40 burpee’s will get that heart pumpin’, your energy flowing & your outlook for the new year started on the right foot.

I don’t like new years resolutions simply because they do not work.  Growing up each year I set my hopes high to stop biting my finger nails…And guess what??  YEP I still do!  Now I have to say not as bad as when I was younger (and by younger I mean even into college I was pretty bad) but my nails are not my greatest feature!

When people say to me “I will start Monday” those are words for FAILURE.  I cringe & try to explain why they should start NOW – TODAY – and NOT wait for Monday.  If they wait until Monday (or the new year) they let their habits get out of control & when Monday comes the body will fight harder against eating clean & moving.  It will feel like a BIG SLUG for eating 5000 calories of crap & not moving a bit.  Why put yourself through that???!!

So I challenge you to start TODAY by cleaning up your eating & getting in an awesome workout that will fuel your energy for 2012.  It is going to be an amazing year & you don’t want to get left behind by waiting to start…
