A HUGE Salad = Leftovers!!!

cabbagesaladI just prepped a HUGE cabbage, lettuce, kale salad.  I am pairing it with bbq’d chicken thighs, corn on cob & baked sweet potato fries.  Leftovers are key to eating clean lunches.  Make an extra big dinner tonight and enjoy the leftovers.  What’s for dinner???

Salad Ingredients:
1 head organic napa cabbage
1 small head romaine lettuce
6-8 kale leaves (tear off stems)
2 grated carrots
1 small pear
1 small apple
1/4 cup or so of sprouted pumpkin seeds
2-3 stalks of celery

Dressing:
Avocado oil
Local raw organic honey
Organic mustard
Salt
Juice of a lemon

Chop up all salad ingredients, whisk salad dressing, toss & serve.  The dressing lasts for a few days in the fridge in a glass container.

Grow Your Own!!!

We are a bit late planting this year but in Cali it will still grow & thrive.  For Mother’s Day I wanted to get things planted so today we took action!!!

Today’s Harvest from our Winter Garden!!!

Harper Harvest is rockin’!!!!  Today we (OK…I mean BEN) harvested both these amazing Brussels Sprouts & Carrots!!!!  LOVE!!!!!!

I can’t wait to make my sauteed Brussels Sprouts!

Who Needs Flowers???

Our garden is rocking!!!  I chopped these up for dinner tonight & sauteed them with coconut oil, salt, pepper & a little coconut amino’s.  SOOOO fresh & awesome.  We paired the dish with baked Cod squeezed with fresh lemon & a half of a baked sweet potato.

Summer Garden Stir-fry

Ingredients:
2 tbsps organic unrefined coconut oil
1 green onion
1 head broccoli
1 small head cabbage
1 small zucchini
1/2 sweet potato
1 large bunch kale
5-6 mushrooms
2 tbsps or so of coconut amino’s or Bragg’s liquid amino’s
Salt/pepper to taste
(I didn’t use the cucumber & tomato as pictured but picked them out of my garden so they made the picture!)

Instructions:
Put the coconut oil into the pan and saute the onion & sweet potato for 4-5 minutes.  Chop all veggies up & set aside the kale.  Add all chopped veggies except the kale and stir-fry for 2-3 minutes.  Add your amino’s & any other spices you desire.  Add chopped kale & saute for 2 minutes or so.  Salt/pepper to taste.

Serves 3-4
ENJOY!

We paired our stir-fry with a pork roast we cooked in the crock pot all day.  Super easy & CLEAN dinner.  Totally Amy Approved!

Happy Earth Day!! (Sunday)

10 Simple Things You Can do to be More Earth Friendly

1. Compost – Have a compost pile or bin outside where you throw your green waste. It makes amazing soil for your garden!
2. Grow Your Own Garden
3. Use Re-usable Napkins – We use them at each meal. I just wash them with my darks. Super easy trick to be green!!
4. Use a BPA Free Waterbottle – You can buy them at ShapeItUp 🙂
5. Make Pulp Crackers – These are my new favorite food & I don’t waste any pulp!
6. Dehydrate Fruit that is Turning – Bananas, Apples, Pears, Plums, Figs – don’t throw them away if they are getting old. Dehydrate them for 9-10 hours & they will stay for weeks!
7. Buy Organic Clothing
8. Reduce Number of Plastic Baggies Used – Use glass containers!
9. Have a Couple of Chickens – Love our Coco & BOSU! 2 eggs a day :). They eat any leftover you have & are super easy to care for.
10. Use Re-usable Grocery Bags – If you need a new one send me an email & I will send you an Amy Approved bag!

We grow the veggies in our garden, juice them for amazing vegetable juice, use the pulp to feed our chickens BOSU & Coco & they produce organic bright beautiful eggs 🙂

Pick of the Day

Yesterday afternoon I picked this out of my garden for our yummy grass fed beef burgers. Onion, oregano, tomatoes, jalepeno and red leaf lettuce. I also used an egg that BOSU laid today!
