Grain Free PUMPKIN Granola

My favorite season is almost here and that means PUMPKIN recipes!!!! Here is a recipe from my dear friend, college roommate & personal trainer Julianna 🙂  Her kids love it so it must be a winner!!!

Grain-Free Pumpkin “Granola”

1 cup pumpkin puree (canned is fine)
2/3 cup coconut oil, melted
2/3 cup maple syrup or honey
1 cup unsweetened shredded coconut, optional
1 tablespoon vanilla extract
2 tablespoons cinnamon
½ teaspoon ground ginger
½ teaspoon salt
3 cups of your favorite mix of nuts and seeds (I like almonds and pecans—no seeds) Nuts should be copped
20 medium dates, chopped

Preheat oven to 325 degrees F. Line two baking sheets with parchment paper.

In a large bowl, stir together pumpkin, coconut oil, maple syrup, vanilla, spices and salt. Mix well, add coconut (if using), nuts and dates. Mix well.

Divide mixture between the two baking sheets, and spread evenly. Bake 30-40 minutes, checking the granola so it doesn’t burn.

At this point, dehydrate the granola, if possible. I used the dehydrator setting on my oven. If your oven doesn’t have a dehydrator setting, try to put the oven at 160 – 170 degrees F. and bake for 4-8 hours more. It’s important to get as much moisture out of this granola as possible. Let cool, then break into small pieces. Store in the cupboard.

Banana Blueberry Bread – YUM!

This is AMAZING!!!! A great snack, breakfast or dessert. To make it a bit sweeter you can add dairy free chocolate chips and/or honey. This bread is Charly approved as well!!!!

Prep time: 10 min
Cook time: 40-45 min
Serves: 8

Ingredients:
4 ripe bananas
4 eggs
1/2 cup almond butter
1/2 cup coconut flour
4 tablespoons coconut oil, melted
1 tablespoon cinnamon
1 tsp baking soda (I skipped this)
1 tsp baking powder (I skipped this)
1 tsp vanilla
pinch of sea salt
zest of 1 orange
Juice of 1 orange
1/2 cup blueberries

Instructions:
1. Preheat oven to 350
2. Combine your bananas, eggs, nut butter, melted coconut oil in mixer & mix well
3. Once all blended add coconut flour, cinnamon, baking soda, baking powder, vanilla & sea salt & mix well
4. Add in blueberries & zest of orange & squeeze juice right into bowl – mix well
5. Grease a 9×5 glass pan, pour in batter & bake for 40-45 min or until the middle is done. Check with toothpick throughout

Sunday Prep Day!

Use Sundays to prep your food for your week to assure you eat clean!!! We smoked a whole chicken, salmon, chicken breasts, sweet potato wedges, broccoli, cauliflower & mushrooms. I also made a huge green salad, roasted an acorn squash & bought a bunch of avocados. This is also for our Sunday dinner but will make for amazing leftovers!

I bought Ben this smoker for his birthday / Father’s Day. We have found a new way to eat clean & we love the smoky flavor of everything!!!

Spiced Pumpkin Raisin Cookies

Fall is my favorite time of the year and pumpkin is one of my favorite veggies.  I found this recipe on Dr Oz’s website so I took the recipe and cleaned it up a bit.  They were a hit!!!

Ingredients:
3/4 cup coconut flour
2/3 cup gluten free oats
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp ground allspice
3/4 cup organic raw sugar
1/2 cup canned pumpkin puree
1/3 cup melted coconut oil
1 tbsp honey
1 tsp vanilla extract
1/2 cup raisins
Small handful of dairy free chocolate chips

Directions

Position a rack in the center of the oven and preheat to 350°F. Line 2 heavy large baking sheets with parchment paper.

In a medium bowl, combine the flour, oats, cinnamon, baking soda, salt and allspice. Stir to blend well. In a large bowl, combine the sugar, pumpkin puree, oil, syrup and vanilla; whisk to blend. Using a flexible rubber spatula, gradually stir the dry ingredients into the pumpkin mixture. Stir in the raisins.

For each cookie, drop 1 generous tablespoon of batter onto the prepared baking sheet, spacing the mounds about 1 inch apart (or use a mini ice cream scoop). Using moistened fingertips, flatten each to a 2-inch-diameter round. Sprinkle each cookie with a bit more raw sugar.

Bake the cookies until brown and a bit firm to the touch, 17 to 20 minutes. Using a metal spatula, transfer the cookies to a rack and cool completely.

Paleo Pumpkin Pie…Fall & Thanksgiving are coming!!

Before going into oven

Serves 6-8

Ingredients:
For Crust
>1 cup gluten free oats or ground almonds
>3 tbsp of melted coconut oil
>1 egg
>1/4 – 1/2 tsp cinnamon & dash organic sugar

For Filling
1 (15 oz) can or box organic pumpkin
3 eggs
1/4 cup honey
1 tbsp pumpkin pie spices (cinnamon, nutmeg, cloves, ginger)
1 tsp natural vanilla
Coconut milk to thin (no more than about 1/3 cup)

Instructions:
1. Preheat oven to 325
2. Grease pie pan with coconut oil & mix crust ingredients by hand
3. Press crust into bottom of pie pan & put in oven while making the filling
4. In your Kitchenaid combine the filling ingredients. (except coconut milk). Add coconut milk if needed to thin slightly
5. After 10-15 min remove crust as it barely starts to brown
6. Pour / smooth the filling over the crust & return to oven for about an hour or until center is no longer jiggly.
7. Top with coconut cream or whipped heavy cream & chopped pecans
8. Enjoy!!!

Apple Cinnamon Maple Bacon Sweet Potato Hash

Prep time: 10 min     Cook time: 10 min    Makes: 2 cups

Ingredients:

  • 2 cups of shredded sweet potato or yams
  • 1/2 of an apple, chopped
  • 3 pieces of bacon, chopped (I like Applegate Farms)
  • 1 tsp ground cinnamon
  • 1 tsp pure maple syrup, optional
  • Sea salt to taste
  • Ghee, bacon fat or fat of choice

Directions:

  1. In a skillet over medium heat, render / cook the bacon until it’s crispy. You can save the fat to cook the rest of the ingredients or pour off the fat and start over with a spoonful of ghee, coconut oil, etc.
  2. Add the sweet potato to the pan, cooking on medium heat until they begin to get golden brown.
  3. Add the apples and stir until they soften, about 3-4 minutes.
  4. Season with the maple syrup, cinnamon and sea salt, to taste.

Bonus: For a one-skillet meal, remove the hash to a plate, then quickly wilt some spinach. Remove the spinach to the same plate, then fry or scramble eggs in the same pan.

Grain Free Banana Bread with Orange Zest

This is AMAZING!!!!  A great snack, breakfast or dessert. 

Prep time: 10 min
Cook time: 40-45 min
Serves: 8

Ingredients:

4 eggs (I only had 3 so I used about 1/4 cup organic apple sauce too)
1/2 cup almond butter
1/2 cup coconut flour

1 tsp baking powder
1 tsp vanilla
pinch of sea salt
zest of 1 orange

Apple Cinnamon Cookies

Ingredients:
2 large apples
2 cups slivered almonds
3 eggs
1 cup organic coconut flakes
2 tsps vanilla extract
2 tsps coconut oil, melted
1 tbsp cinnamon
1 tsp salt

Optional: (I used sugar & dates)
2 tbsps organic sugar or honey
4 dates

Instructions:

Preheat oven to 350. Food process or blend in your vitamix your 2 large chopped & cored apples. I did not peel mine but that is an option. Set puréed apples aside. If your almonds are whole blend them in your vitamix or food processor for 20 sec to chunk them up. To your bowl add apples, almonds, cinnamon, melted coconut oil, salt, vanilla, coconut flakes & if you choose sugar/honey & chopped dates. Mix well. Beat eggs in separate bowl then add & mix well. Spoon batter onto baking stone &/or covered baking sheets. Bake for 20-25 minutes or until edges are golden brown. Cool on wire rack & enjoy!!!

Pulp Muffins – Stop Wasting the Pulp!

This is a great way to use the pulp from your juicing.  So many people tell me they will not juice regularly because they don’t like throwing away all of the pulp.  So if you don’t like the pulp crackers or need a new recipe try these pulp muffins!  The muffins kind of crumbled so I need to continue to work on the recipe but they are tasty either way!

INGREDIENTS:
Pulp from juicing for 2 – any ingredients are fine  (carrots, apple, romaine, cabbage & orange) Prob about 3 cups
1 cup coconut flour
1/2 cup apple sauce
2 eggs
2 tbsps apple cider vinegar
Cinnamon
1/4 cup coconut
Raisins
Blueberries
5 dates
1 tsp baking soda

Preheat oven to 325.  Whisk 2 eggs in 1 tbsp ACV & toss into bowl with pulp.  Add all other ingredients (chop up the dates into small pieces) & mix to combine.  You can add walnuts or chopped almonds if desired.  Add mixture to greased muffin tins or pie dish (or both).  Bake for 40 minutes at 325.  Cool before taking them out.  Careful they do crumble a bit!

Amy Approved Cookies!

These simple cookies acquire their sweetness not from sugar or honey, but from dried fruit: dates, currants and cherries. They’re good for breakfast or any time you need quick bite or boost of energy.

Ingredients

  • 1/4 cup coconut flour
  • 1/2 cup almond butter
  • 6 pitted dates (soaked in warm water for 15 minutes)
  • 3/4 cup shredded unsweetened coconut
  • 1/2 cup unsweetened apple sauce
  • 2 eggs (beaten)
  • 1 1/2 tsps cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp unrefined sea salt
  • 1/2 tsp baking soda
  • 2 tbsps dried cherries
  • 2 tbsps chopped walnuts
  • 3 tbsps currants

Instructions

  1. Preheat your oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Combine the coconut flour, almond butter, and dates in a food processor or blender. Process until well combined and the dates have broken up into really small pieces, about a minute.
  3. Add the shredded coconut, applesauce, eggs, cinnamon, vanilla, salt and baking soda and process for 30 seconds until a wet dough forms.
  4. Add in the remaining ingredients, and pulse once or twice until the fruit is incorporated into the dough but not chopped up.
  5. Using an ice cream scoop or large tablespoon, drop the dough in heaping spoonfuls onto a baking sheet lined with parchment paper.
  6. Dip a metal spatula in water, and use the bottom to lightly press down each ball of dough. These cookies will not spread or rise so make sure to make them the shape you want them prior to baking.
  7. Bake for 12 to 15 minutes, until they are golden on top and slightly brown along the edges. Serve immediately or store in the freezer, thawing for 15 to 20 minutes before you plan to serve them.
