Garden Cabbage Salad

Fresh from our garden today…. Here is what I used in my cabbage salad:
1 head cabbage
Carrots
Cilantro
Lemon basil
1 avocado
1 head broccoli
1 onion
1/4 cup raw pumpkin seeds

Dressing:
Juice of 1 lemon
3 capfuls Apple cider vinegar (ACV)
4 tbsps or so of balsamic vinegar
10 “turns” of salt
Dash of sugar
Dash of coconut aminos or bragg’s aminos

Chop up all of the veggies.  Whisk the dressing ingredients in a separate bowl, pour on top, mix & refrigerate for at least one hour.  Serve cold.  ENJOY!

We paired our salad with a big marinated bbq’d chicken breast & my pulp crackers.  SOOOO yummy!

What’s In Your Salad?

Make a huge salad at dinner so you have leftovers for a few lunches. The next day throw on a protein source (fish, chicken, lean beef, pork or turkey) & chunk up a small sweet potato or butternut squash. Easy, quick & clean lunch!

Lunch on the Go

Here is a healthy example of lunch on the go. Do you pack your lunch daily?

This is a hodge podge of lettuce, grated carrot, chopped celery, 1/4 sweet potato, 1/4 avocado, 2 sliced strawberries & 4-6 ounces of Cod mixed up with whole grain mustard. This creates a balanced, tasty, easy lunch. TRY IT!

Tips:
*GLASS CONTAINERS – no bpa, keeps food fresh, washes easily, Costco $30
*Ice in a zip lock – keeps your lunch cold & fresh
*Cook an extra piece of cod when you are making your dinner
*Cook 3-4 extra sweet potatoes so you can chunk them up cold onto your salads
*Have the salad already made (no dressing)

I made this in 5 minutes. It is TOTALLY doable if you are PREPARED!!! There are ZERO excuses for last minute fattening lunch choices. EAT CLEAN = HOT BODY!!!!

Cucumber Mint Salad = The Perfect Spring Side Dish!

Ingredients
1 cucumber
2 stalks celery
1/2 large or 1 small avocado
4 tbsps mint
1 small onion
Balsamic vinegar
3 capfuls apple cider vinegar
Dash of fruit infused vinegar (like fig)
Salt / pepper

Chop all the veggies & throw into bowl. Put all vinegars, salt & pepper & stir. Serve cold.

We made lean pork in the crockpot, above salad, a couple of my pulp crackers & my favorite Bubbies sauerkraut.

Whatever I Could Find in the Garden Salad

As my chicken breasts & sweet potato fries (sprinkled with cinnamon for a hint of sweetness) were cooking I ran out to the garden to find what we had ready to throw together. So here it goes:

1 cucumber
1 tomato
1/4 jalepeno
Small handful cilantro, chopped
Few leaves of mint, chopped
Salt/pepper
Squeeze of fresh lemon
2 capfuls of my favorite Apple Cider Vinegar

Mix together & chill until rest of dinner is ready.

Root Veggies, Cucumber Mint Salad & Baked Cod = EASY Dinner

Make the cucumber salad first and let it marinade in the fridge. Then turn oven to 400 deg and cut up your root veggies. Mix together in pan and bake in oven. Put your thawed Cod in a pyrex baking dish. Season generously with pepper & fresh lemon. Put cod in oven and set timer for 20 min. Everything will be done at the same time!

Cucumber Mint Salad
1 large cucumber
2 medium tomatoes
1/4 cup onion
1/8 cup chopped fresh mint
Salt & pepper to taste
3 tbsps apple cider vinegar
Squeeze of fresh lemon

Chop everything up sprinkle w/ salt & pepper, acv & lemon then refrigerate until dinner 🙂

Root Veggies
Zucchini
Squash
Sweet Potato
Grape-seed Oil
Salt
Balsamic Vinegar

Chop up any root veggies you have, place in pan, drizzle w/ oil & salt.  Bake at 400 deg for 30-35 min.  Take out and drizzle w/ balsamic vinegar & serve.

Amy’s New Favorite Salad

I made this salad and we are hooked!!! Here it goes:

Ingredients:
1 can organic garbanzo beans
2 carrots chopped
1 green onion chopped
1/2 cup chopped cucumber
1 tomato chopped
1/2 avocado chopped
1 cup pea shoots chopped

Dressing:
1 tbsp balsamic vinegar
1 tbsp flavored vinegar (I used blackberry)
Juice of one orange
2 tbsps of lemon basil, chopped
2 tbsps of basil, chopped
1 tbsp dill, chopped
1 garlic clove
Salt/pepper

Chop up all ingredients and put into bowl. Into small sauce pan add dressing ingredients. Simmer until warm then pour into vita-mix and blend for a few seconds. Add to salad, toss and serve.

Husband comment: “This is the best dressing I have ever had!”
Amy’s thought: Proud moment…homemade dressing NOT out of a bottle and he loves it. YEAH!!!
