Happy Thanksgiving…Grateful…Recipes…& more!

Happy Thanksgiving!!!!
I absolutely LOVE the Thanksgiving holiday.  It’s a time where family gets together, reflects on what they are thankful for, cooks amazing food, exercises & enjoys being together.

It’s so important to be THANKFUL for everything that surrounds you on this day.   Your family, good energy, CLEAN food, friends, laughs, sunshine, running partners, love, football, fun & the quality of your day.  So many people always want what they don’t have.  Take a look around you and be THANKFUL for what you already have. (this paragraph I wrote in my 2012 Thanksgiving blog but I thought it was so inspiring I would write it again)

I have so much to be thankful for this year.  Our daughter Charly is beyond a blessing.  Her arrival has brought so much joy, unconditional love & of course sleepless nights 🙂  We love her so much and are beyond grateful and blessed to be parents.

Now for the food!
If you haven’t followed my blog you don’t know about the amazing squash side dishes, sweet potato mash, cranberry sauce, paleo pumpkin pie & roasted turkey.

Here are a few of my favorites:
Roasted Acorn Mash

Amy’s tip of the day:
*EXERCISE – wake up before everyone else & MOVE MOVE MOVE!
*Eat a plate of food (yes whatever you want) but DON’T go for seconds…
*Eat a piece of pie but cut it in half…
*If you are going to drink like a fish…Eat like a bird!

Are you ready for the holiday season? Don’t wait until January 2nd to get fit – I CHALLENGE you to be more fit BEFORE the holidays than after. Lose those 2 pounds NOW, cut out dairy NOW, skip dessert NOW, do the last 3 reps NOW. Start TODAY!

Squash is IN Season!!!


Squash is super nutritious, warm, sweet, EASY, inexpensive & is IN season right now.  Here are a few of my favorite recipes:

Butternut Squash
Butternut & bison or beef
Same as above with brussels sprouts
Meatball Veggie Soup
Butternut Squash Soup (horrible photo but great soup!)
Veggie Stirfry
Roasted with grapeseed oil, salt & pepper
Leftovers chunked into my salads for a 5 minute lunch

Acorn Squash
Stuffed Acorn Squash
Roasted Balsamic Acorn Squash ***My FAVORITE!
Roasted Acorn Squash Mash ***GREAT for Thanksgiving!
Roasted with coconut oil, salt, pepper & cinnamon

Spaghetti Squash
Spaghetti w/ Meatsauce
Spaghetti Squash warm w/ salt, pepper & Bragg’s flakes – YUM!
Spaghetti Squash mixed into my salad

Roasted Balsamic Acorn Squash

Ingredients
1 acorn squash
Grape-seed oil
Salt & pepper
Cinnamon
1/3 cup balsamic vinegar

Preheat your oven to 400 deg F.

Line a baking sheet with parchment paper or tin foil.

Slice the acorn squash in half. Scrape out seeds then slice into thin moon shape slices.

Douse the slices with oil, cinnamon, salt & pepper.

Place in the oven and bake until squash is fork tender about 17-20 minutes.

While squash is baking , pour the balsamic vinegar into a small sauce pan & heat to a simmer. Let the vinegar reduce to at least half. The goal is a syrupy consistency. You won’t necessarily be able to see that consistency while the pot is over heat, so if you think it is reduced enough , take it off the heat and while it cools you should be able to see it thickening. If its not thickening give it more time on the heat.

Drizzle the vinegar over the squash & serve hot.

These were super yummy warm & also great leftover the next day with my lunch.  It was kind of like eating ribs – you even want to lick your fingers!!!

Bison is Amy Approved

You can make this dish with Bison, grass-fed beef or ground turkey. We like Bison the best and have found the best deal at Costco! It is lean, high in protein, great tasting & has an Omega 6 to Omega 3 ratio of 4:1 or less!

Butternut Squash Bison Mash
1 large Butternut squash
1 pound ground Bison
5-6 garlic cloves
3/4 large red onion
1 jalapeño
Chilie powder
Salt / pepper
Onion powder
2 tbsps unrefined coconut oil
Braggs flakes (sprinkle on top)

Cut the butternut squash in half & bake at 400 deg for 40 min. In meantime sauté your garlic, onion & jalapeño until soft. Add the ground bison & cook until browned. Add all spices. Once the squash has cooled peel off the peeling & mash / lightly chop. Serve bison mixture over the squash. Top with Braggs Nutrition Yeast Flakes for a cheesy finish. ENJOY!
