Meatballs = Clean Protein & AMAZING Leftovers!!

I used our favorite turkey burger recipe and made a batch of meatballs for dinner tonight.  They were very moist, the perfect size (I ate 3!) & are stored away in fridge for clean lunches!!!  I paired them with a Napa cabbage salad (made a huge one so I have leftovers) with vinegar & homemade sweet potato fries (Charly’s fav!).  I also served sauerkraut on the side because I aim to get fermented foods into my body once a day.

HERE is the recipe I used for the meatballs.  It’s key to grate the onion & apple into the meat mixture.

Ingredients:
1lb organic turkey burger
1 egg
1-2 small apples grated
1/2 onion grated
3 or so garlic cloves grated (I used minced)
Handful or so of gluten free oats
Coconut aminos
Salt / pepper

Mix the ingredients in a large bowl.  Use a large scoop & make small balls in a cake pan.  Add about 1/4 inch of water, cover with tin foil & bake at 400 deg for about 1 hour.  The last ten minutes or so take off the tinfoil to brown.

Eating clean is NOT hard!!  It takes a bit of prep but when you make large portions it ensures your lunches are clean, balanced & EASY!!!

Meal in a Pan (YES ONE!)

This is a staple in our house because it literally makes no dishes, has fat, protein, carbs & GREENS all in one dish!!!

Ingredients:
1lb turkey burger, beef or bison
1/2 large onion
5-6 garlic cloves
Broccoli
1-2 zucchini
Asparagus (or whatever veggies you have on hand)
1 tbsp coconut oil
Salt / pepper
Spices (whatever you like – I used organic onion powder)
Coconut aminos
1 can organic black beans

Chop & sauté the onion & garlic in the coconut oil for 4-5 minutes. Add in the ground turkey. Cook until almost brown. Add in chopped veggies, salt, pepper & spices. Mix together then add a dash of coconut aminos & the black beans. Simmer until the veggies are soft.

Ben loves to use organic tortilla chips to dip. I typically have leftover green salad in the fridge & put the meat /veggie mixture over that plus will indulge in a handful of chips. Charly just eats it as is.

Amy’s “Get Lean” Meal = Turkey Lettuce Wraps

This is the PERFECT dinner when you are not starving, skipped your workout for the day or is your scheduled day off, want to feel leaner tomorrow and/or you just want to eat clean & Amy Approved 🙂  NOW if you ran 10 miles and did an Amy circuit you will feel like this is only your appetizer 🙂

Turkey Lettuce Wraps
1 pound ground turkey burger
1 zucchini
1 onion
1 tbsp unrefined organic coconut oil (I buy my coconut oil HERE)
1 avocado
1 tomato
Salt / Pepper
Spices as desired (I used organic onion powder, garlic powder, cilantro, basil – I buy my organic spices HERE)

In your coconut oil saute the onion for 1-2 minutes.  Throw in the turkey burger (you can also use grass fed beef, ground chicken, moose or bison) & brown.  Add the chopped zucchini, salt/pepper & desired spices.  In meantime wash your lettuce, chop your avo’s & tomato.  Once the meat mixture is done, pile everything high on your lettuce wraps and ENJOY!
