A Little Something Sweet…

I found this recipe is Terry Walter’s Clean Food, modified it a bit & YUM is all I have to say! 

Banana Coconut Cocoa Cookies
2 bananas, mashed
1/4 cup coconut oil, melted
1/4 cup brown rice syrup
1 egg
1 cup ground almonds
2/3 cup brown rice flour
1/4 tsp baking soda
3/4 cup shredded unsweetened dried coconut
1 tbsp cinnamon
1 tbsp organic sugar
Pink of sea salt
1/4 cup organic cocoa nibs

Preheat oven to 350 degree’s.

In medium bowl, combine bananas, oil, syrup & egg.  In separate medium bowl, combine almonds, flour, baking soda, cinnamon, sugar, coconut & salt.  Add the banana mixture to the dry ingredients & stir until just combined (do not over-stir).  Fold in cocoa nibs.

Drop by the spoonfuls onto your baking stone or lined cookie sheet.  Place in oven and bake 13-14 minutes or until lightly browned.  Remove and cool on wire rack or wax paper.

Makes 1 1/2 dozen cookies
