Root Veggies, Cucumber Mint Salad & Baked Cod = EASY Dinner

Make the cucumber salad first and let it marinade in the fridge. Then turn oven to 400 deg and cut up your root veggies. Mix together in pan and bake in oven. Put your thawed Cod in a pyrex baking dish. Season generously with pepper & fresh lemon. Put cod in oven and set timer for 20 min. Everything will be done at the same time!

Cucumber Mint Salad
1 large cucumber
2 medium tomatoes
1/4 cup onion
1/8 cup chopped fresh mint
Salt & pepper to taste
3 tbsps apple cider vinegar
Squeeze of fresh lemon

Chop everything up sprinkle w/ salt & pepper, acv & lemon then refrigerate until dinner 🙂

Root Veggies
Zucchini
Squash
Sweet Potato
Grape-seed Oil
Salt
Balsamic Vinegar

Chop up any root veggies you have, place in pan, drizzle w/ oil & salt.  Bake at 400 deg for 30-35 min.  Take out and drizzle w/ balsamic vinegar & serve.
