Cucumber Mint Salad = The Perfect Spring Side Dish!

Ingredients
1 cucumber
2 stalks celery
1/2 large or 1 small avocado
4 tbsps mint
1 small onion
Balsamic vinegar
3 capfuls apple cider vinegar
Dash of fruit infused vinegar (like fig)
Salt / pepper

Chop all the veggies & throw into bowl. Put all vinegars, salt & pepper & stir. Serve cold.

We made lean pork in the crockpot, above salad, a couple of my pulp crackers & my favorite Bubbies sauerkraut.
