EASY Thai Soup – warm, satisfying and did I say EASY???!!!

This soup is a MUST TRY!!!  My two sisters and mom all gave me the recipe and it took me months to finally make it.  It’s a new a staple in our house!  It’s warm, satisfying and EASY.

Ingredients:
4-5 cans (full fat) organic coconut milk
1 can of bamboo shoots
Pad thai rice noodles
Onion
Garlic (I actually forgot the garlic and it tasted amazing)
1/2 stalk celery
6-8 carrots
Chopped broccoli (I didn’t have any so I used asparagus)
Frozen peas
Frozen corn
Green onions – to top at end (if wanted)
3 large chicken breasts
organic curry powder
Organic red pepper flakes
Salt / pepper (a lot)
Coconut oil

Sauté the onions, garlic, carrots & celery in a pan until softened.  Add chopped chicken & brown.  ALWAYS add a ton of salt / pepper.  Put the cans of coconut milk into the soup pan and turn on heat.  Add the cooked veggies & chicken and season generously.  Add in the asparagus, frozen veggies (you can use ANY veggies in this dish so open your fridge and explore) and any other veggies you have.  Season with the curry powder, red pepper flakes & salt/pepper.  Cook the rice noodles (8 minutes) and then add them to the soup.  Stir everything together and then top with chopped green onions.  Simmer for as long as desired.  Before serving check spices and add if needed.  Serve HOT.  Yummmm!
