When you don’t want a salad for lunch… 

It’s not often that I want a salad for lunch.  To be honest I only love a salad when someone else makes it for me (why is someone else’s always better??) so I sneak in veggies wherever I can!   This is Charly and I’s favorite lunch – salmon mix that we spread onto corn thins, rice cakes, lettuce boats or paleo wraps.  The below pic is today’s version but sometimes I add onion, English peas or even olives.  Last night my hubs bought a huge amount of fresh salmon at the fish market so we were spoiled with amazing leftovers but typically we use wild canned salmon.

 
This recipe makes enough for 2 days of lunches for Charly and I.
1 can wild salmon or fresh

Bubbles dill pickles (I was out today)

3-4 celery stalks

Organic stone ground or Dijon mustard 

1 avocado 

Salt & pepper 

Chop everything up & mix into a bowl.  Mash in the avocado & season as desired. Eat on corn thins, lettuce wraps, rice cakes or paleo wraps.  

This high protein, clean, GREEN 💚 lunch will leave you feeling satisfied & happy!
