Tis the Season for Popsicles!!!

Kids love popsicles ANY time of the year.  There is NO need to buy those food dye chemical laden ones – make your own!!!  These only took 3 minutes to make.  Juice anything you want, put into popsicle molds, put in a wooden stick & freeze!  SIMPLE, yummy, nutritious & FUN for kids!!!  Ok FUN for adults too!!!!

Pulp Crackers = YUM

If you follow my blog you know that I took a 30 day juice challenge (to juice 30-40 ounces per day for 30 days straight) back in February and haven’t looked back.  I felt such a difference in my energy, digestion & overall health I decided it is a lifestyle for me.  So as you can imagine I have a TON of pulp daily.  I decided to buy a dehydrator and make my own pulp crackers.  Now you know if you don’t eat any grains that eating a cracker that DOES NOT hurt your gut is amazing!  I take the pulp, add a few spices & some water, make into patties & dehydrate for 9 hours.  YUM YUM YUM!  I use them to dip in all three of my meals.  There is a ton of fiber and they are just crunchy, salty goodness!

Today I juiced: 1 head romaine lettuce, 8 carrots, 1 granny smith apple, 1/4 head green cabbage & 1 orange (orange for Ben!)

I store the juice in these mason jars in the fridge.  I drink one right away in the morning, one mid morning or post workout & one in the afternoon.

Add 1/2 cup water (or so), organic spices: garlic powder, onion powder, bragg’s flakes, parsley, salt & basil.  (you can add whatever you want)

Flatten into patties & dehydrate for 9 hours.

I also will throw onto my dehydrator a banana or two that are turning, a sliced apple, kiwi or whatever fruit I desire.  I usually add cinnamon to my fruit.  Sooo yummy & ZERO preservatives!

Pulp Muffins – Stop Wasting the Pulp!

This is a great way to use the pulp from your juicing.  So many people tell me they will not juice regularly because they don’t like throwing away all of the pulp.  So if you don’t like the pulp crackers or need a new recipe try these pulp muffins!  The muffins kind of crumbled so I need to continue to work on the recipe but they are tasty either way!

INGREDIENTS:
Pulp from juicing for 2 – any ingredients are fine  (carrots, apple, romaine, cabbage & orange) Prob about 3 cups
1 cup coconut flour
1/2 cup apple sauce
2 eggs
2 tbsps apple cider vinegar
Cinnamon
1/4 cup coconut
Raisins
Blueberries
5 dates
1 tsp baking soda

Preheat oven to 325.  Whisk 2 eggs in 1 tbsp ACV & toss into bowl with pulp.  Add all other ingredients (chop up the dates into small pieces) & mix to combine.  You can add walnuts or chopped almonds if desired.  Add mixture to greased muffin tins or pie dish (or both).  Bake for 40 minutes at 325.  Cool before taking them out.  Careful they do crumble a bit!

Juicing = BIG Splash of Nutrients!

I have been juicing everyday for the past 2 weeks and will continue for 30 full days.  I drink about 30 ounces per day in 10 ounce increments.   I juice once in the morning & store the juice in the fridge in air-tight canning jars (pictured above).   I have a ton of energy & love this effect!  BOSU & Coco (our chickens) really love it because they get all of the pulp for their breakfast!

Today’s Juice:
15 organic carrots
1 large granny smith apple
1/4 large organic purple cabbage
1 head organic Romaine Lettuce

We grow the veggies in our garden, juice them for amazing vegetable juice, use the pulp to feed our chickens BOSU & Coco & they produce organic bright beautiful eggs 🙂
